VitaD Yeast Healthy Bread Solutions

Add sunshine to your bread

Lately, there have been a lot of debates as to whether vitamin D – the ‘sunshine vitamin’ – could play a role protecting from COVID-19; however, definite evidence on this is still lacking.

What is confirmed is that Vitamin D is essential for good bone health and is indeed thought to have a role in promoting immunity, cardiovascular health, lung function and proper neurological conditions, as well as preventing respiratory infections and cancer.

Indeed, vitamin D’s effect on immune systems has long been debated among experts. Recently, a number of studies have suggested that low vitamin D levels are linked with higher risk of death from coronavirus diseases, and some scientists believe that enough levels of vitamin D can reduce tissue damage from lung infections.

Beginning of October last year a group of researchers and doctors have formed an international alliance aiming to encourage governments to increase recommendations for vitamin D intake, as they believe this could help to reduce the COVID-19 hospitalisations. Moreover, there is growing concern that many people may have poorer vitamin D levels than usual as a result of staying indoors for longer periods during the pandemic.
At the end of this same month, different scientists were calling for governments to add vitamin D to common foods such as bread. This is an easy step to achieve when using Lallemand VitaD yeast to produce your daily bread.

Lallemand Baking offers a range of fresh and dry baker’s yeast naturally enriched with this vitamin. Our VitaD yeast can be used as natural and vegetarian source of Vitamin D. Baker’s yeast can naturally produce Vitamin D when exposed to the ultra violet light of the sun, similar to humans. When that happens, the natural sterols in yeast (ergosterol) are converted to vitamin D (ergocalciferol).

Lallemand has developed a process that treats yeast with UVB light to produce a natural and vegetarian source of Vitamin D yeast which can be used in bread, baked goods and other food products.
