Compressed / Block Yeast: This yeast is characterized by a high moisture content and is compressed into a block. It is easy to use and doesn’t require any specific conditions of use versus dried yeast. Contrary to generally accepted ideas, it is not damaged if in contact with salt.
Crumbled / Bag Yeast: Fine yeast particles obtained by vacuum filtration. It is easy to use and doesn’t require any specific conditions to use. It is also easier to dilute into water (yeast suspension) versus block yeast.
