Instaferm® PADY is microencapsulated instant dry bakers yeast obtained from a specially selected strain of Saccharomyces cerevisiae designed for optimal use in all kinds of dry mixes, such as bread and pizza, within controlled distribution and use parameters.

Instaferm Protected Active Dry Yeast (PADY) was developed in the 1960s by lowering the moisture content of ADY and adding emulsifiers and antioxidants (BHA). PADY requires the same high dose rates as ADY but is more stable and can be used in flour mixes without protective packaging. It has the added benefit of elevated naturally occurring vitamin D2, a vegetarian source, as opposed to D3 coming from animals.
Protected active dried yeast (PADY) is intended to be used in mixes when the yeast will come into contact with flour or other ingredients with moisture contents greater than 5%.
Instaferm PADY also contributes to good volume, rich color and excellent aroma in all yeast-leavened products. This reference is only available in North America.
