Micro-encapsulated Yeast

Micro-encapsulated dry yeast is a pure yeast strain of Saccharomyces cerevisiae produced by special fermentation and drying process.

Protected active dried yeast (PADY) is intended to be used in mixes when the yeast will come into contact with flour or other ingredients with moisture contents greater than 5%.
